¾ of a Bottle of Red Wine
½ cup orange juice
Brandy
2 Tablespoons of Brown sugar
1 Tablespoon Juniper Berries
1 Cinnamon Stick
2 Tablespoons of Cloves
2 Star Anise
2 Cardamom pods
1 Orange Sliced (save some for garnish)
Clare is making a bouquet garni on the episode #124 with all the herbs inside, but you could just add them into the pan instead.
Take a large saucepan and add the brown sugar
Then add the orange juice and most of the wine
Add the orange slices.
Pop in the bouquet garni.
Refill the empty orange juice glass with a half glass of Brandy and pour in.
Turn on the heat on a medium setting until it is nearly at a simmer. Try to keep from bubbling.
Stir gently for 5 minutes, avoiding bubbles forming
Add the rest of the wine and transfer onto a low heat.
Add a lid and leave on low heat stove for up to three hours if needs be! Aim for at least 15 minutes though to give time for the flavours to infuse. Keep stirring occasionally.
Take off the heat, remove the bouquet and the orange slices.
Strain if needed (Loose herbs), although bits of orange pulp are delicious!
Serve in your favourite mug, garnish with the other orange slice and enjoy…
