Clare’s Roasted Garlic
A quick and simple recipe, great straight from the oven and eaten clove by clove. Also, just as good served cold and spread onto a crispy fresh French Baguette! I suggest one bulb per person to start with.
You will need:
Large Bulbs of Garlic, the larger the better!
Olive Oil
Rock Salt (I recommend Malvern Smoked Salt)
An oven Tray
An oven.
Method
Pre heat your oven to 200dc
Using a sharp knife cut the head off the bulb of your garlic exposing the centres of the cloves with the base of the bulb still intact.
Place the bulb head up directly onto the oven tray and give it a good drizzle of olive oil letting it soak into the individual cloves, cover the bulb head with a good pinch of the rock salt.
Place the tray into the oven for around 15-20 mins until the cloves have started to rise from the bulb slightly and the garlic is starting to brown.
Leave it to cool for a few moments before tucking in - Yum!!

Note
If you want to jazz up the garlic a bit more you can also use a different type of oil to cook it in such as truffle oil, or for a little kick try chilli oil!!
